St. Patrick’s Day Breakfast

Surprise your family with a festive breakfast on St. Patrick’s Day! Change up a normal breakfast with a few fun twists. Green pancakes and rainbow fruit skewers are easy to make and are the perfect way to get into the spirit of St. Patrick’s Day.

We started by decorating the table with honeycombs in different shades of green then added some leprechaun gold (find gold confetti here) to make it extra magical. For tableware, we used a mix of green and gold:

Buttermilk Pancakes

You can dress up any pancake recipe for St. Patrick’s Day with a little green food coloring but this buttermilk pancake recipe is a family favorite!

Ingredients:

  • 1 cup flour
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons butter
  • 1 cup buttermilk
  • 1/4 cup milk
  • 1 egg
  • Green food coloring

Let the ingredients get to room temperature before mixing them.

Combine the flour, sugar, salt, baking soda and baking powder in one bowl. In another bowl whisk together the buttermilk, milk and egg. Melt the butter and then whisk into the buttermilk mixture. Add the green food coloring to the liquid mixture a little at a time until you get the color you want. The pancakes will lighten a bit when you cook them.

Heat a griddle over medium heat. Pour the liquid mixture into the flour mixture and stir together until just combined. Be careful not to over mix, you want the batter to have small lumps. Use around 1/4 cup of batter for each pancake. This recipe makes about a dozen pancakes.

Simple Rainbow Fruit Skewers

Ingredients:

  • Strawberries
  • Mandarin oranges
  • Pineapple
  • Kiwis
  • Blueberries
  • Raspberries

Using skewers or cake pop sticks, add the fruit in the following order; strawberry, orange slice, chunk of pineapple, slice of kiwi, a couple blueberries, raspberry. We used 6″ bamboo skewers.
