August 24th is National Waffle Day, and it’s definitely a day worth celebrating by taking a day off work (Just tell your boss it’s part of your religion… breakfast is a religion, right?)
Anyway, this is my family’s most favorite waffle recipe. It’s crispy and delectable. It’s a recipe my Grandpa used to make for us every time we stayed at his cabin. It brings back so many awesome memories. And yes, it also require bacon grease (which happens to be the 2nd greatest food of all time).
Ingredients needed:
-3/4 cups flour
– 3/4 cups Jiffy Cornbread mix
– 1/2 tsp salt
– 1 Tbs sugar
– 1 1/4 cups milk
– 1 egg
– 3 tablespoons butter, melted
– 1 Tbs bacon grease
- In a large bowl, mix together the flour, cornbread mix, baking powder and sugar. Then mix milk, egg, melted butter, and bacon grease. Mix until smooth.
- Spray waffle iron with cooking oil and pour about 1/2-3/4 cup into the iron. Follow the direction on the waffle iron. Serve hot.
Note: If you have extra waffles, you can refrigerate or freeze them, and when ready to eat, toast them until crispy.
